What are these blue powders?

These are finely ground bright blue butterfly pea flowers, traditionally used in Southeast Asia for tea, drinks, and food. They are special primarily because of their wonderful, completely natural blue color. Mix them into water, milk, yogurt, or dough, and everything will turn beautiful shades of blue.

The taste is very mild, so the powder doesn't try to be the main star of the dish. You can make a blue latte, mix it into your morning yogurt, pancake or cupcake batter, cream, frosting, chia pudding, smoothie, or cocktail.
