What is this blue powder?

If you're seeing butterfly pea powder for the first time and wondering – what do I do with this? – it's much simpler than it seems.

These are finely ground, vibrant blue butterfly pea flowers, traditionally used in Southeast Asia for tea, beverages, and food. They are special primarily for their beautiful, completely natural blue color. Mix them into water, milk, yogurt, or batter, and everything will be tinted with lovely blue hues.

The taste is very mild, so the powder doesn't try to be the main star of the dish. You can make a blue latte, mix it into your morning yogurt, pancake or cupcake batter, cream, icing, chia pudding, smoothie, or cocktail.

And showing kids the color change with lemon is a separate treat altogether.

💜 Magical Lemonade

For 1 glass:

• ½ tsp Butterfly Pea powder
• 30 ml warm water
• 25–30 ml passion fruit puree
• 10 ml fresh lime juice
• 1–2 tsp maple syrup
• 150 ml sparkling water
• lots of ice

Mix the Butterfly Pea powder in warm water. Separately, in a glass, mix passion fruit puree, lime, and maple syrup, add ice and sparkling water. Slowly pour the blue Butterfly Pea mixture on top.

The result is a tropical, refreshing, sweet and sour drink, with the blue color beautifully transitioning to purple as you pour. 💙💜
